DESCRIPTION:A sure sign that Spring is on its way is when you start to notice buckets\, hung onto trees\, peppered along rural roads. \n\n\n\nThere’s a sweet spot in temperature ranges that makes for tapping trees the most proficient; when the nights dip below freezing and the daytime temps are above and into the forties. We tapped maple trees in January and February and made syrup. Birch trees can be tapped when the weather gets a little warmer in the spring. \n\n\n\nThere is a wide range of methods for collecting and processing sap\, from primitive ways to the latest innovations. We’ve done them all and would love to show you! \n\n\n\nYou will learn everything you need to know about collecting sap from drilling the trees and inserting taps to creating the final product of delectable birch syrup. \n\n\n\nBe sure to show up a good ten minutes early so we can get settled and start the fun journey together. Most of the the class will be outdoors\, so dress appropriately. \n\n\n\n$20\, kids under 12 are free.

SUMMARY:Let's Make Root Beer the Old Way!
DESCRIPTION:Root beer is a distinctly American drink with a sweet\, herbal flavor that’s been made since the colonial era. \n\n\n\nTraditionally\, brewers made the drink by fermenting an herbal decoction made with sassafras bark\, sarsaparilla root\, and other herbs with sugar and yeast to make a naturally bubbly\, probiotic soft drink. \n\n\n\nSassafras\, sarsaparilla\, ginger root\, and birch all give the brew its distinctive flavor\, but without the additives. \n\n\n\n\nSassafras gives root beer its distinctive\, slightly mint-like flavor\, and is traditionally used to purify the blood in folk medicine.\n\n\n\nSarsaparilla is traditionally used as a renal tonic and for the complexion.\n\n\n\nGinger gives this root beer recipe a rich\, fiery note. Herbalists use ginger to support cardiovascular and metabolic health\, as well as for nausea and stomach upset.\n\n\n\nLicorice gives the recipe a subtle\, anise-like sweetness that pairs well with sassafras. Licorice also supports adrenal health\, and may be helpful in addressing hormonal imbalance in women.\n\n\n\nDandelion Root adds the subtlest bitter note to the brew. Dandelion root also supports liver health.\n\n\n\n\nWe will make a ginger bug (the life of the root beer!) and learn how to combine various herbs\, roots\, and barks to make this yummy and healthy elixir. \n\n\n\nWe get to sample some finished product\, plus everyone takes home a flip-top bottle of what we make in the class.

DESCRIPTION:Microgreens\n\n\n\nWith the winter upon us\, now is the time to introduce a little color and fresh food into our homes. Microgreens fit both of these goals. \n\n\n\nA microgreen is really just a regular vegetable that is harvested early in its development cycle. They have been called the “veal of greens” because of their short life and intense flavor. Some crops are better suited to being harvested early than others are. There are several advantages of microgreens\, especially for the living room farmer: \n\n\n\n\nMicrogreens are grown inside\, and so are not as susceptible to insects and other predators. Mold can be a problem\, but there are ways to deal with that.\n\n\n\nBecause of their fast growing cycle and early harvesting\, you can get real food really fast.\n\n\n\nBecause they are grown in soil\, there is less of a chance of bacterial contamination than a soil-less crop such as sprouts.\n\n\n\nHaving a shelf full of green crops growing in your living room really lifts the soul!\n\n\n\n\nFirst\, we’ll talk about the lifecycle of plants and what is happening inside the seed and leaf\, and then taste some samples that have already been grown. \n\n\n\nYou’ll make your own flat\, which contains the soil\, seeds\, and a tray to fit it in. That planted tray is yours to keep\, so you can watch your greens grow and then re-use it for the next batches.

SUMMARY:Soapmaking
DESCRIPTION:Soap is one of the fundamental inventions that created the modern world. Consisting of three basic ingredients\, oil\, water\, and a high-pH reactant (we usually use lye)\, soap’s main job is to separate oil and water\, which allows the oils and grime to be washed away. \n\n\n\nIn addition to the three basic ingredients\, there is an endless number of additions that can be used to enhance the smell and color\, change the cleaning properties\, and affect the hardness of the bar\, and the softness of the feel. \n\n\n\nIn this workshop\, we start in the classroom to learn about the chemical processes happening when you make soap and when you use it. Then\, we’ll take a look at an online soap calculator\, which will allow us to plug in desired traits and get the exact measurements of the ingredients required. \n\n\n\nThen\, we will move to the soap lab and mix up our batch. \n\n\n\nEach student has a soap mold that makes four bars of soap. When the mix is ready\, we pour the so-called batter into each of these molds. \n\n\n\nThe mixture must cool down over night\, but in the morning can be cut into individual bars. The bars will take about six weeks to cure\, during which time it will lose some of the water content and become harder. But mostly\, the curing time will allow the chemicals to get to know each other so they can work together to keep us clean.

DESCRIPTION:Pemmican is the ultimate survival food; it is delicious and healthful as well. \n\n\n\n\n\n\n\nLil’ anecdote: \n\n\n\nAnthropologist and explorer Vihljamur Stefansson observed that the Inuit would spend weeks away from camp with nothing more than pemmican to eat and snow to drink. Despite this extremely limited diet\, they would return in sterling condition. \n\n\n\nWhile living with the native peoples\, Stefansson himself adopted a pemmican habit enjoying the same health-preserving results. European settlers quickly embraced the practice as well\, trading with the Native Americans to obtain this valuable\, lightweight\, and nutrient-dense food while learning to make it themselves. \n\n\n\nNeat! \n\n\n\nProperly made pemmican made with just meat and fat if stored properly lasts many years\, even decades. We’ll make some yummy and interesting varieties with nuts\, berries\, honey and herbs\, along with various proteins. \n\n\n\nEveryone takes home a few types of Pemmican\, plus the knowledge and recipes to make plenty more for family and friends!
